Whole30 – Days 15 – 21

Hi guys! Sorry I’ve been MIA! My mom and her fiancé came into town for M’s birthday then **** hit the fan and the whole house got the flu. G-man came down with it on Monday, M followed suit on Tuesday and  today was apparently my turn. Hopefully hubby doesn’t get it since he’s had it already. I’m keeping my fingers crossed S also doesn’t get hit… maybe, hopefully, with some luck, she doesn’t get it because she’s getting antibodies from nursing? Maybe.

I’m going to do a quick run-down of food without my usual formatting so I can get back on track tomorrow without staying up too late tonight.

Day 15 (Thursday):

Meal 1: Leftovers. Tenderloin, asaparagus, sauteed cabbage, roasted bell peppers, roasted brussel sprouts with bacon, Frank’s hot sauce.



Meal 2: Lebanese slow-cooker pork spare ribs, topped with egg and sweet potato “bun”, salad with balsamic dressing, tomatoes and bell peppers, quick pickles.



Meal 3: Chicken sausage, spaghetti squash, marinara.


Day 16 (Friday):

Meal 1: Roasted chicken, cauliflower hash, raspberries.



Meal 2: Chicken salad with homemade mayo, raisins, apples, celery, almonds, cilantro. Tomatoes, romaine leaves, avocado.


Meal 3 (first meal shared with my Mom and her fiancé): Cauliflower fried rice, sautéed shrimp, chimichurri sauce, salad with mustard vinaigrette, bacon.


I served this for dessert. Berries, coconut cream, raw cashews, coconut flakes. Yes, that is technically SWYPO. Considering I had guests in town and the ingredients were compliant… and it’s not a brownie, a cookie or ice-cream, SWYPO can suck it. It was delicious and no one overindulged.



Day 17 (Saturday):

Meal 1: Fried eggs, slow cooker pork, avocados, strawberries, mashed sweet potatoes, asparagus.


Meal 2: Pot au feu – courtesy of my Mom. Veggies cooked in bone broth, alone with beef shanks.



Food at M’s birthday party: We celebrated M’s birthday a little early and had a birthday party for some of her friends and their parents. I made Devils on Horseback (prunes stuffed with macadamia nut ricotta and wrapped in prosciutto — then baked), Deviled Eggs, a coconut-date mousse, some mixed nuts roasted with EVOO and herbs, or EVOO and Lebanese 7 spice, and some berries. All compliant.

Meal 3: Everyone was stuffed, so we pureed the leftover veggies from the pot au feu and made a soup. Topped with a drizzle of coconut milk.


Day 18 (Sunday):

Meal 1: Eggs, fruit, bacon. Sorry forgot to take a picture.

Meal 2: Leftover salad. Mashed sweet potato, the last of the slow cooker pork, lettuce with avocado, beef shank, tomatoes, and green beans. Mustard vinaigrette.



Meal 3: Bone-in rib-eye steaks, squished potatoes (boiled, squished, then baked at 400 degrees with EVOO until crispy on the outside and soft on the inside… delicious), roasted carrot “fries”, broccoli sautéed with garlic.

Day 19 (Monday): **Happy Birthday M!!** 

Meal 1: Leftover steak, eggs baked in avocados, asparagus, chimichurri.



Meal 2: Really really late since we went to Botany Bay. Last meal with my parents. Ground turkey, broccoli and sweet potato hash with marinara atop spaghetti squash. Fried egg on top. Hot sauce. Sorry forgot to take a picture!

Meal 3: Roasted chicken, cucumbers, salad, sweet potatoes. And a healthy dose of antibiotics for G-man who has croup. We spent over 2 hours at the doc so this was a very late dinner. Sorry, no picture. We did give M another mousse for her to blow out her candle though!


Day 20 (Tuesday): Full-blown crappy flu day.

Meal 1: Fried eggs, handful of berries, avocado. Sorry, no picture. Grumpy babies keeping my hands busy.

Meal 2: Soup. Chicken stock, beef shank, carrots, napa cabbage.


Meal 3: Roasted chicken, roasted parsnips, avocado. I know it’s not pretty. Give me some credit. Two sick kids and I still threw a hot dinner together. And didn’t burn down the house. FTW!



Day 21 (today – Wednesday):

Meal 1: SSU eggs, avocado, potato hash. Sorry, no picture.

Meal 2: Soup. Kids didn’t want to eat anything. G-man went to bed before lunch. Chicken broth, carrots, bok choy, potatoes.



Meal 3: Chicken sausages, peppers… not sure what kind… they come in a brine with pickled garlic (they’re delicious), noodles, marinara.



I’m going to do one more post with the photos from M’s birthday, then I’m going to keel over from exhaustion. The flu sucks.
