You’re probably wondering why I listed “day 32” when we’re doing a Whole30. Well, we’re planning on getting to day 60… maybe even 100, but we all had a small piece of 85% chocolate today that I threw in the pot of chili, so technically we’re starting back over at day 1 tomorrow — Since we were planning on continuing anyway, it’s not a total bummer, but it’s just a reminder to triple-check all labels.
Here’s what we’ve been eating. I forgot to take pictures of all meals so I’m just going to do a quick post on what I’ve got. Gotta get back to Super Bowl Sunday cookin’!
Pan-seared lamb chops, garlic haricot verts, slow-roasted tomatoes, mint chimichurri sauce.
Uova en Purgatoria (Eggs in purgatory), green beans, “awesome sauce” (WF2)
Thai Basil Beef, Vietnamese Goi Salad, Coconut Cauliflower Rice
Leftover Thai Beef for breakfast with scrambled eggs and avocado
Chicken Salad, mashed sweet potatoes, left over Jicama Salad, Sautéed Broccoli
Char Siu Pork, Steamed asparagus, Asian Cauliflower Fried Rice, Awesome Sauce
Rib Eye, Mashed Potatoes, Salad
For the Super Bowl today — Balsamic glazed chicken livers with bacon and microgreens — I’m going to serve this with some cucumber slices and also some crisped-in-the-oven potato slices.
Our “Indian” inspired Chili — It has spices that are typical in Indian cooking (like cumin and cardamom). I planning on putting over a big ol’ plate of zoodles.
Ok – gonna run. Our house is rooting for the Seahawks. Let’s see how tonight pans out. Write more soon!
